04 - 1 zucchini, sliced into thick rounds
05 - 1 small red onion, cut into wedges
06 - 7 oz cherry tomatoes

07 - 2 tbsp olive oil
08 - 2 tbsp lemon juice
09 - 2 garlic cloves, minced
10 - 1 tsp dried oregano
11 - 1 tsp smoked paprika
12 - ½ tsp salt
13 - ¼ tsp black pepper

# How To Make It:

01 - In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and black pepper to create the marinade.
02 - Add the chicken cubes to the marinade, toss thoroughly to coat, and allow to rest for 10 minutes, or up to 1 hour for enhanced flavor.
